Dried Salt 1Kg (Tokyo)

฿1,100

This is a very rare Japanese sun-dried sea salt! In Japan, where rain and humidity are abundant, sun-dried sea salt, which crystallizes only by the power of the sun and wind, was not available until 1977, thanks to our original research. It is produced on Izu Oshima, a remote island surrounded by beautiful nature. The raw material is 100% pure seawater carried by the Kuroshio Current. The salt is concentrated in a net-covered salt field and crystallized in a greenhouse-type crystal box. The ingredients and taste are very different from those of mass-produced sun-dried salts from overseas, as they are made in small quantities and with great care. The ingredients include not only sodium chloride, but also magnesium, calcium, potassium, and other elements in small quantities that are essential for preserving life. To achieve this, we go to great lengths to stir the salt crystals that gradually appear in the crystal box every day. The taste is not only salty, but also has a subtle sweetness, umami, richness and sharpness. It has a complex taste derived from seawater, and has the umami taste of trace salts unique to unheated crystals. When used in cooking, it brings out the sweetness and umami of ingredients, creating a delicious taste. It can be used for all kinds of dishes, but we especially recommend using it as a decorative salt, making the most of its rough crystals that dissolve slowly, as a dipping salt for sushi and tempura, as a salt for sake, and in soups and other dishes where the subtle flavors of the ingredients come alive.
